Dr. Elizabeth Canales
Elizabeth Canales is an Associate Professor and Extension Economist in the Department of Agricultural Economics at Mississippi State University. She joined Mississippi State University in 2016 after working in the private agribusiness sector.
Elizabeth's extension work focuses on specialty crop production marketing, budgeting and farm profitability, agribusiness, and food systems. Her primary research focus has been the adoption of technologies and innovations in the agricultural and food industry, including the adoption of conservation practices, food safety practices, and other farming and marketing technologies. She has also worked on issues related to food access. She holds a MS and Ph.D. degree in Agricultural Economics from Kansas State University.
Dr. Courtney Crist
Dr. Courtney Crist is an Associate Extension Professor and State Specialist of food science and food
safety at Mississippi State University in the Department of Food Science, Nutrition, and Health
Promotion. Her extension appointment includes providing USDA regulatory guidance (HACCP), guidance
for food entrepreneurs, consumer food safety education, and home food preservation.
Dr. Crist has coordinated, developed and delivered information and educational programs related to muscle foods (HACCP and Marination 101), small food businesses/entrepreneurs (Food as a Business), and consumers (Food Safety at Home).
Her research background involves processed meat products as well as consumer and sensory evaluation of food practices and products. Her research interests include food safety, sensory and consumer science using novel techniques, food science education, and muscle foods shelf life and quality.
She earned her BS and MS (Food Safety, Food Science and Technology) from Mississippi State University. She received her doctorate (Food Science and Technology) from Virginia Tech.
